Italian Sausage

I use this same seasoning for pork sausage and for venison sausage.

Italian Sausage

  • 1 pork butt, 4 to 5 lbs, coarsely ground for sausage
  • 2 tsp paprika or sweet red pepper, ground
  • 1 tsp cayenne pepper, crushed
  • 1-1/2 tsp salt
  • 4 tsp fennel seed

Mix all ingredients together. Make into patties, or may be used to make sausage links. This mixture will be a medium hot sausage.
