Italian Sausage
I use this same seasoning for pork sausage and for venison sausage.
Italian Sausage
- 1 pork butt, 4 to 5 lbs, coarsely ground for sausage
- 2 tsp paprika or sweet red pepper, ground
- 1 tsp cayenne pepper, crushed
- 1-1/2 tsp salt
- 4 tsp fennel seed
Mix all ingredients together. Make into patties, or may be used to make sausage links. This mixture will be a medium hot sausage.
