Venison Bundles

I had ground venison and a package of philo … so I dreamed this up.

Venison Bundles

2 lbs ground venison (or ground beef, turkey, etc)
2 Tbsp vegetable oil
2 tsp shawarma spice *
2 medium onions, chopped or minced
3 Tbsp Worcestershire sauce
2 Tbsp Balsamic vinegar
salt & ground black pepper
1/2 package of philo, thawed

Brown the venison in oil in a large, deep saute pan over medium-high heat, breaking the meat up finely. Move the meat to the sides and put the onion in the middle. Cook the onion a few minutes (I like to caramelize some of it). Sprinkle with shawarma spice, Worcestershire, vinegar, salt, & pepper. Add 1/2 cup water and mix well. Reduce heat to low and simmer until water is evaporated, stirring occasionally. Remove from heat.

Lightly grease a baking sheet. I spray with oil, Lorraine & the boys gave me a pump up oil spritzer from Pampered Chef for Christmas, love it!

Stack 2 sheets of philo on a work surface, spray lightly with oil. Put about 1/4 cup meat mixture near one end. Roll up half way, fold the sides in, and complete the roll up. Place seam side down on the baking sheet. Repeat with remaining philo until philo/meat is used up. Spray all bundles lightly with oil.
Bake in preheated 400 F oven for 20 minutes or until the bundles are evenly browned on top. Serve.

* I use Beef Shawarma spice purchased at Neomonde, a Mediterranean deli in Raleigh. There are many recipes for shawarma spice, but the one I have in my recipe book smells the most like Neomonde’s.
