Peanut Butter & Jelly Waffles

This caught my eye when my sons were younger. It was a good experiment.

Peanut Butter & Jelly Waffles

1-1/4 cups all-purpose flour
3 Tbsp sugar
1 Tbsp baking powder
1/4 tsp baking soda
1/4 tap ground cinnamon
2 eggs, separated
1-1/4 cups milk
1/3 cup peanut butter
3 Tbsp butter, melted
Jelly of your choice

In a large bowl, combine the flour, sugar, baking powder, baking soda and cinnamon. In another bowl, whisk the egg yolks, milk, peanut butter and butter; stir mixture into dry ingredients just until moistened.

In a small bowl, beat egg whites until stiff peaks form; fold into batter. Bake in a preheated waffle iron according to manufacturer’s directions until golden brown. Serve with jelly. Yield: 10 waffles.

Note: 1/3 cup PB didn’t have a strong enough flavor — next time I make this I’m going to up it to 1/2 cup.
